September Series Volume 2 - Three Easy Avocado Recipes
Basic Guacamole
Makes 8 servings
Ingredients
2 avocados
Juice of 1/2 lime
1 teaspoon ground cumin
1/2 cup diced tomato
2 tablespoons chopped fresh cilantro
1/4 cup diced red onion
Kosher salt and freshly ground black pepper
Hot sauce, to taste
Instructions
Slice the avocados in half lengthwise around the pits. Twist to separate the halves and remove the pits. Spoon the flesh into a medium bowl. Use a fork to mash the avocado until as chunky or smooth as you prefer. Stir in the lime juice, cumin, tomato, cilantro and red onion. Season with salt, pepper and hot sauce. Serve immediately.

Avocado Toast
Makes 1 Serving
Ingredients
1 avocado ripe
2 slices of bread of choice (sourdough is my favorite)
1 garlic clove (cut in half, skin on)
Extra virgin olive oil
salt and pepper
lemon juice optional, from a fresh lemon is best
finely chopped cilantro or parsley
Instructions
Cut avocado in half and remove seed. Toast bread to your taste, using your method of choice. While toast is still hot, lightly rub the surface with the cut side of the garlic clove. Use a spoon to scoop avocado flesh out, then a fork to mush it onto the toast. Sprinkle with salt and pepper. Squeeze over a bit of lemon juice, drizzle with olive oil, sprinkle with cilantro or parsley. Serve immediately!

Shrimp Scampi Guacamole
Makes 8 servings
Ingredients
2 avocados
Juice of 1/2 lemon
2 tablespoons chopped fresh basil
1 cup chopped cook shrimp
2 cloves minced garlic
1/3 cup shredded Parmesan cheese
Kosher salt and freshly ground black pepper
Hot sauce, to taste

Use a fork to mash the avocado until as chunky or smooth as you prefer. Stir in the lemon juice, basil and garlic. Fold in shrimp and cheese. Season with salt, pepper and hot sauce. Serve immediately.
